The roaster runs right behind the counter, so the smell of green beans turning brown is the first thing you notice, before the coffee, before the noise of the espresso machine settling into its rhythm. Nobody hides the work here — pull up a stool near the drum and watch a batch finish.

Seats are close enough to hear the crack of first roast and far enough that your laptop stays dry when the steam wand runs long.

Petaluma doesn't rush its mornings, and pour-over rewards the same patience — a slow bloom, a slower pour, four minutes you can't skip past. We time it because rushing it is how you get a flat cup.
